Menu Plan Monday 1/29/12

This past week was a little busy. We had leftovers twice because it was easier. I haven't been grocery shopping much lately, we've been trying to use up what we have.

spaghetti
tastefully simple party (hubby had leftovers)
chicken fajitas
we went to mom's house for dinner
beef stroganoff
leftovers
chicken cordon blu chowder *look for the recipe Thursday*

This week we're hoping to have:

pizza

slow cooker Parmesan honey pork (I'll use chops instead of roast)
chicken taco soup *new*
spaghetti

dinner at mom's
dinner party at soccer

I've been wanting to try some new recipes and use my slowcooker. I had some beef stew meat in the freezer that I had no clue what to do with. I found this recipe on the kraft website and decided to try it out. I have to be honest. It wasn't a winner for our family. C and I loved it, hubby didn't and A wouldn't touch it. He actually doesn't touch much these days though.


2 lb. beef stew meat, cubed
1 can cream of mushroom soup
1 onion, chopped
2 tsp garlic
1 cup beef broth
2 tsp. paprika
1 cup Sour Cream
2 Tbsp. flour
1 lb egg noodles

Place meat, mushroom soup, onion and garlic in slow cooker. Add broth & paprika.. Cook on LOW 6 to 8 hours. Mix sour cream and flour in slow cooker. Cook, covered, on low 15 min.  Cook noodles as directed on package. Drain noodles; place in large serving bowl. Add meat mixture; mix lightly.  Serve.

Meal Plan Monday 1/22

I decided it would probably be easier to tell you what we ate last week as opposed to what we're eating this week. I've noticed the meal plan I share with you, and what we actually eat are two way different menus.
This past week has been crazy. My father in law was released from the hospital, after being there since July. So hubby was taking care of him a lot. Somewhere between school and soccer, C picked up pink eye. He now has it in both eyes. A is starting with a cough. On top of all that, it snowed! So we spent a few hours each day this weekend playing in the snow.

Last week we enjoyed :

Grilled Cheese & Tomato Soup
Steak & Salad

Ham & Potato Soup
Leftovers

Lasagna with French Bread

It was a yummy week. :)

This week we hope to have:

What's Cooking Thursdays? Soft Pretzel Bites

I have been wanting soft pretzels for a long time. but the ones from the mall make my stomach hurt with all their butter/grease. Stuck inside on a very cold day with two very active little boys I decided to make some. I am so glad we did. Not only did they turn out amazing, but we had SO MUCH FUN making them! We made letters, shapes and bites. C said to me the next day "mom, remember when we made the pretzel mini bites? That was a lot of fun! We should do it again" It will definitely be done again soon.  Hubby, who doesn't like soft pretzels, ate some.


1 1/2 cups warm water
2 tbsp brown sugar
1 package active dry yeast (2 1/4 tsp)
6 tbsp unsalted butter, melted
2 tsp salt
4 1/2 to 5 cups all-purpose flour
3 quarts water
3/4 cup baking soda
1 whole egg, beaten with 1 tbsp cold water
Coarse sea salt

Mix 1 1/2 cups water, sugar, yeast, and butter together. Let sit for 5 minutes. Add salt and flour and mix. Knead until the dough is smooth and begins to pull away from the side of the bowl. Cover and let sit until the dough doubles in size, about 1 hour. Preheat the oven to 425 degrees F. Bring the remaining water to a boil and add the baking soda. Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces. Roll each piece into a long rope and cut into 1 inch "bites". Boil the pretzel bites in the water solution in batches, 10 - 15 bites at a time. Boil for 30 seconds for each batch.  Remove bites with a large slotted spoon. Place pretzel bites on a paper towel to drain, and transfer to a greased baking sheet. Brush the tops with the egg wash and season liberally with salt.Bake for 16 minutes until golden brown. Serve with cheese sauce or mustard or eat plain.

Whats Cooking Thursdays? Peanut Butter Balls

One of my favorite combinations is peanut butter and chocolate. Reese's is my favorite candy. Give me something similar I can make at home and watch out. These peanut butter balls are SO good, you'll want to share with the neighbors so you won't eat them all. :) (I'll share a 'healthier' recipe next week, promise!)



You'll need :
2 cups Creamy Peanut Butter
1 cup butter, melted
6 cups powdered sugar
1 package of chocolate chips

Mix peanut butter, butter and powdered sugar until mixed. Shape into balls (I used a cookie scoop), Place them on a cookie sheet and freeze until firm. Melt chocolate chips according to package directions. Dip each ball into the melted chocolate and place on waxed paper.  Store in the refrigerator.

Meal Plan Monday 1/9

What a hectic crazy week/weekend it has been! We didn't really stick to the schedule last week, but that's okay because I wasn't pulling my hair out at dinner time. This weekend, I'm still working on cleaning out my freezers and the pantry. The freezers are starting to have a small dent in them. I'm excited to try out Once A Month Cooking maybe next month so I really need to clean out the freezers!

The other night I was looking for a quick and easy meal for dinner but I wanted to use up what I had in the fridge. Mainly ham. Ham Mac & Cheese sounded pretty good! And it was such a hit. Hubby had seconds and took the leftovers for work the next day. I didn't even get to take a picture! And it's so simple to make.

Take my macaroni and cheese recipe, when you add the cheese sauce to the pasta, add diced ham as well. Bake as usual. Enjoy. :)

Meal Plan 1/2

My first post of the new year! Hopefully I'll be doing a lot of blogging this year. I've kind of slacked off lately and I miss blogging! I'm hoping to clear out my freezer and use up my pantry items. To do that, I'll need to make use of my meal plans.
